ALMOST my Mom’s Deviled Eggs

 

If you’re lucky enough to still have some colored eggs, this is a great option. I really really REALLY tried to make them like my mom’s but, they still didn’t taste exactly the same. But, my son-in-law said they were good. So here’s what I did!

(BTW…I cheated and bought eggs that were already hard-boiled and peeled. Is that bad?)

Ingredients

  • 12 whole hard-boiled eggs

  • ½ cup mayonnaise

  • 1 TBLS yellow mustard

  • 2 tsp pickle juice (I used sweet)

  • ¼ tsp coarse salt 

  • ½ tsp ground black pepper

  • ½ tsp bacon grease

  • Ground paprika, for sprinkling

Directions

  • Cut boiled and peeled eggs in half, lengthwise.

  • Remove yolks from the egg halves and place into a bowl.

  • Mash yolks with fork until they’re broken up.

  • Add the mayonnaise, mustard, pickle juice, salt, pepper, and bacon grease.

  • Stir to combine; the mixture should be mostly smooth.

  • Spoon the mixture into a zip-top plastic bag and snip ¼ inch off of one of the bottom corners.

  • Pipe the mixture into the egg white halves.

  • Sprinkle with paprika and chill.

  • ENJOY!
