ALMOST my Mom’s Deviled Eggs
If you’re lucky enough to still have some colored eggs, this is a great option. I really really REALLY tried to make them like my mom’s but, they still didn’t taste exactly the same. But, my son-in-law said they were good. So here’s what I did!
(BTW…I cheated and bought eggs that were already hard-boiled and peeled. Is that bad?)
Ingredients
12 whole hard-boiled eggs
½ cup mayonnaise
1 TBLS yellow mustard
2 tsp pickle juice (I used sweet)
¼ tsp coarse salt
½ tsp ground black pepper
½ tsp bacon grease
Ground paprika, for sprinkling
Directions
Cut boiled and peeled eggs in half, lengthwise.
Remove yolks from the egg halves and place into a bowl.
Mash yolks with fork until they’re broken up.
Add the mayonnaise, mustard, pickle juice, salt, pepper, and bacon grease.
Stir to combine; the mixture should be mostly smooth.
Spoon the mixture into a zip-top plastic bag and snip ¼ inch off of one of the bottom corners.
Pipe the mixture into the egg white halves.
Sprinkle with paprika and chill.
