Healthy Blueberry Banana Muffins

These Healthy Blueberry Banana Muffins are so much better than I thought they'd be! They’re made with honey instead of sugar, which makes them healthier…and the sweetness of the bananas with the tart blueberries make these super delicious. (we always have a few bananas ready to be baked into something, don’t we?)

 

Ingredients
2 large eggs whisked
2-3 ripe bananas mashed
1/4 cup butter, melted
1/3 cup + 2 tablespoons honey or maple syrup
5-6oz vanilla yogurt
1 tsp vanilla
1 tsp cinnamon
1/4 tsp salt
1/2 tsp baking soda
2 tsp baking powder
2 cups flour
1 cup blueberries

Instructions

  1. Preheat oven to 350 and add muffin liners to a 12-cup muffin tin

  2. Mix eggs, bananas, butter, honey or maple syrup, yogurt, vanilla extract

  3. Mix flour cinnamon, salt, baking soda and baking powder together in a large bowl

  4. Stir together

  5. Gently fold in blueberries

  6. Scoop the batter into the prepared muffin tin, filling the muffin cups about 3/4 full

  7. Bake for 20 minutes or until a toothpick inserted into the center comes out clean

  8. Remove from oven and let cool in tin for 5 minutes before placing on a cooling rack.
