Creamy Taco Soup
This is just as easy as making tacos! I’ve never made anything like this before, but it was so easy and so yummy! I took some to my neighbors who blow the driveway for me and they agreed! And asked for the recipe!
Ingredients
1 pound lean ground beef (prepare with…)
1 envelope taco seasoning (per directions)
4 cups chicken broth
2 (10 ounce) cans Ro-tel diced tomatoes and green chilies with juices
1 (14 ounce) can black beans drained and rinsed
1 package steamable corn drained
½ red bell pepper chopped
8 ounces cream cheese softened, see note
Salt & pepper to taste
Toppings: grated cheddar, avocado, cilantro, tortilla strips, etc.
Directions
Put everything except the cream cheese into a large pot
Bring to a boil
Once boiling, turn down the heat so it is simmering gently, uncovered, for 8-10 minutes
While the soup cooks, prep your toppings
Cut the cream cheese into smaller pieces and add it to the soup. Let it melt in (stir until it’s fully dissolved)
Season the soup with salt and pepper and serve with toppings as desired
