Creamy Taco Soup

 

This is just as easy as making tacos! I’ve never made anything like this before, but it was so easy and so yummy! I took some to my neighbors who blow the driveway for me and they agreed! And asked for the recipe!

Ingredients

  • 1 pound lean ground beef (prepare with…)

  • 1 envelope taco seasoning (per directions)

  • 4 cups chicken broth

  • 2 (10 ounce) cans Ro-tel diced tomatoes and green chilies with juices

  • 1 (14 ounce) can black beans drained and rinsed

  • 1 package steamable corn drained

  • ½ red bell pepper chopped

  • 8 ounces cream cheese softened, see note

  • Salt & pepper to taste

  • Toppings: grated cheddar, avocado, cilantro, tortilla strips, etc.

Directions

  • Put everything except the cream cheese into a large pot

  • Bring to a boil

  • Once boiling, turn down the heat so it is simmering gently, uncovered, for 8-10 minutes

  • While the soup cooks, prep your toppings

  • Cut the cream cheese into smaller pieces and add it to the soup. Let it melt in (stir until it’s fully dissolved)

  • Season the soup with salt and pepper and serve with toppings as desired
